Homemade Pumpkin Seed Clusters

I promised you a quick easy chocolate fix. Let’s do it. These pumpkin seed clusters are low in sugar, high in zinc (good for fertility, skin and bone healing!) and contain a lot of coconut oil (good for skin, gut, immunity, moods).

Luckily, I still have a few in my fridge from the last batch I made, so I don’t have to attempt this one-handed.


You’ll need pumpkin seeds, cocoa or cacao, honey, salt (I use pink Himalayan salt), vanilla essence, coconut oil, cocoa butter and shredded coconut.


Start with 3 tablespoons of cacao powder, 5 tablespoons cocoa butter and 2 tablespoons coconut oil.


Melt it in a bowl over boiling water, or in a double boiler, until liquid.


Add one teaspoon of salt.


Add one teaspoon of vanilla essence.


I added about a tablespoon of honey. You might like a little more.


Add one cup of shredded coconut.


Add two cups of pumpkin seeds.


Mix it up.


Until you have a bowl of delicious seedy goop.


Now spoon blobs out onto baking paper-lined trays, and harden in fridge for an hour (or freeze until firm, if you’re impatient).


Peel off the paper, and store in containers in the fridge.
